A delicious and easy recipe for protein-packed egg bites filled with cottage cheese and veggies, perfect for a quick breakfast or snack.

  • 1 cup cottage cheese
  • 6 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup chopped vegetables (spinach, bell peppers, etc.)
  • Salt and pepper to taste
  • Cooking spray or oil for the muffin tin

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
  2. Whisk together the eggs, cottage cheese, salt, and pepper until well combined.
  3. Stir in the shredded cheese and your choice of chopped vegetables.
  4. Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes or until the egg bites are set and lightly golden on top.
  6. Allow to cool slightly before removing from the muffin tin.
  7. Enjoy warm, or let them cool completely and store in the refrigerator.
