Cheesy Hamburger Potato Casserole

A comforting casserole combining ground beef, potatoes, and cheese, perfect for family dinners.

Ingredients

  • 1 ½ lbs ground beef (or ground turkey)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 5 – 6 medium russet potatoes (thinly sliced, about 1/8 inch)
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup shredded mozzarella (optional, for extra meltiness)
  • 1 10.5 oz can cream of mushroom soup (or cream of chicken)
  • 1 cup milk
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • 1 tbsp olive oil or butter (for greasing the dish)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish with olive oil or butter.
  2. Sauté the ground beef along with the chopped onion in a skillet over medium heat for about 5-7 minutes until fully cooked. Drain excess fat, then add minced garlic, salt, pepper, and paprika. Mix well and sauté for another minute.
  3. Whisk together the cream of mushroom soup and milk in a bowl until smooth.
  4. Layer half of the thinly sliced potatoes at the bottom of the greased baking dish.
  5. Add half of the sautéed beef mixture over the potato layer.
  6. Pour half of the creamy mushroom sauce over the beef and sprinkle 1 cup of shredded cheddar cheese on top.
  7. Repeat the layers with the remaining potatoes, beef mixture, sauce, and top with the rest of the cheddar cheese and mozzarella.
  8. Cover the dish with foil and bake for 45 minutes.
  9. Remove the foil and bake for an additional 15-20 minutes until the cheese is golden brown.
  10. Let the casserole sit for about 5 minutes before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3-4 days. Reheat in the oven or microwave until warmed through.
