Warm, cheesy meatball subs filled with savory meatballs, marinara sauce, and melted mozzarella, perfect for gatherings or cozy nights in.

Ingredients

  • 1 lb ground beef or a mix of beef and pork
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • 8 oz mozzarella cheese, shredded
  • 4 hoagie rolls
  • Olive oil for toasting

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the ground meat, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, and a sprinkling of salt and pepper until combined.
  3. Using your hands, form the mixture into meatballs about 1.5 inches in diameter and place them on a baking sheet.
  4. Pop the baking sheet into the oven and bake for 25-30 minutes until they’re cooked through and slightly browned.
  5. While the meatballs are baking, heat a saucepan over medium heat, pour in the marinara sauce, and add the baked meatballs to simmer for 5-10 minutes.
  6. Slice your hoagie rolls in half, brush with olive oil, and toast on a baking sheet in the oven for about 5 minutes.
  7. Place the simmered meatballs into each toasted roll, topping with marinara sauce and shredded mozzarella cheese.
  8. Return the assembled subs to the oven for about 5 minutes until the cheese is melted.
  9. Take the subs out of the oven and serve warm.

Notes

For extra flavor, let the meat mixture sit for a few minutes before forming into meatballs. You can also experiment with different meats and cheeses.
