Delicious and easy to whip up, these cheesy muffin tin egg bites combine cottage cheese, fluffy eggs, and colorful veggies for a protein-packed breakfast.

Ingredients

  • 1 cup cottage cheese
  • 6 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced vegetables (bell peppers, spinach, or your choice)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing the muffin tin

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a muffin tin.
  2. Combine the cottage cheese, eggs, shredded cheese, and diced vegetables in a large mixing bowl. Season with salt and pepper.
  3. Mix until everything is well blended.
  4. Pour the mixture into each muffin cup, filling them about 2/3 full.
  5. Bake for 20-25 minutes, or until set and lightly golden.
  6. Cool in the pan for a few minutes before removing.
  7. Serve warm or allow to cool for meal prep.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Can be frozen for up to 2 months.
