A comforting and hearty breakfast dish combining crispy potatoes, fluffy eggs, and melted cheddar cheese.

  • 4 eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced ham or bacon (optional)
  • Salt and pepper to taste
  • 2 tablespoons butter or oil
  • Chives or green onions for garnish (optional)

Instructions

  1. Heat the skillet by heating butter or oil over medium heat. Add diced potatoes and cook until golden and crispy, about 10-15 minutes, stirring occasionally.
  2. Beat the eggs in a bowl and season with salt and pepper. Whisk until well combined and slightly frothy.
  3. Scramble the eggs by pouring them into the skillet and cooking until done, about 3 minutes.
  4. Combine the cooked potatoes with the scrambled eggs, mixing everything together.
  5. Melt the cheese by stirring it into the mixture until melted and gooey. If adding ham or bacon, toss it in now and cook for another minute.
  6. Serve hot, garnished with chives or green onions if desired.
