Deliciously cheesy zucchini breadsticks that are crispy on the outside and soft on the inside, perfect for snacking or as a side dish.

Ingredients

  • 2 medium zucchinis, grated
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Combine the grated zucchinis, mozzarella cheese, and Parmesan cheese in a bowl.
  3. Prepare the dry ingredients by mixing the flour, baking powder, garlic powder, salt, and black pepper in a separate bowl.
  4. Combine the dry ingredients with the zucchini mixture.
  5. Stir in the beaten eggs and olive oil until well combined.
  6. Spread the mixture onto the prepared baking sheet in an even layer.
  7. Bake for 20-25 minutes or until golden brown.
  8. Cool slightly before cutting into sticks. Serve warm.

Notes

To prevent excess moisture, squeeze out liquid from grated zucchini before mixing. Bake longer for extra crispiness.
