A delightful Cherry Upside Down Cake featuring a beautiful layer of caramelized cherries atop a soft, buttery cake, perfect for any gathering.

Ingredients

  • 1/2 cup (114g) unsalted butter, divided
  • 1 cup (200g) brown sugar
  • 1 cup (150g) fresh or frozen pitted cherries
  • 1 1/2 cups (190g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) milk

Instructions

  1. Prepare the cherries by washing and pitting them if fresh, or thawing and draining if frozen.
  2. Preheat the oven to 350°F (175°C).
  3. Create the caramel base by melting 1/4 cup of butter and mixing it with brown sugar; pour into a cake pan.
  4. Arrange the cherries over the caramel mixture.
  5. Mix the dry ingredients: flour, baking powder, and salt in a bowl.
  6. Cream the remaining butter and granulated sugar until light and fluffy.
  7. Incorporate the eggs one at a time, mixing well after each addition.
  8. Add vanilla extract to the mixture.
  9. Combine the dry and wet ingredients, alternately adding milk until just combined.
  10. Pour the batter over the cherries in the pan.
  11. Bake for 30 to 35 minutes until a toothpick comes out clean.
  12. Cool for 10 minutes, then invert onto a serving plate.
  13. Slice and serve warm or at room temperature.

Notes

For best flavor, serve with whipped cream or vanilla ice cream. Store leftovers in an airtight container.
