  • 1 lb chicken (boneless, skinless)
  • 2 cups rice
  • 4 cups chicken broth
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup carrots (chopped)
  • 1 cup peas
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: herbs (like thyme or parsley)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic to the pot and sauté until soft and fragrant.
  3. Season the chicken with salt and pepper, then add it to the pot and cook until browned.
  4. Stir in the rice and toast for 1-2 minutes.
  5. Pour in the chicken broth, then add the chopped carrots and peas, and give a gentle stir.
  6. Bring to a boil, then reduce heat to low, cover, and let it simmer for 20-25 minutes.
  7. Fluff the rice with a fork before serving.
