Chicken Enchiladas

Delicious and comforting chicken enchiladas filled with seasoned chicken and topped with melted cheese.

Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup enchilada sauce
  • 8 corn or flour tortillas
  • 1/2 cup diced onion
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté the diced onion in olive oil until soft and translucent.
  3. Mix the chicken, cumin, garlic powder, and half of the enchilada sauce in the skillet. Season with salt and pepper.
  4. Warm the tortillas until pliable.
  5. Fill each tortilla with the chicken mixture and sprinkle with cheese, then roll them up tightly.
  6. Arrange the rolled enchiladas seam-side down in a baking dish.
  7. Add the remaining enchilada sauce on top and sprinkle the rest of the cheese.
  8. Bake for 20-25 minutes until cheese is bubbly and golden.
  9. Garnish with fresh cilantro before serving.

Notes

For extra flavor, serve with guacamole or salsa and a side of Mexican rice or salad.
