A comforting and versatile dish made with leftover chicken and colorful vegetables, perfect for a quick weeknight dinner.

Ingredients

  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Heat sesame oil in a large skillet or wok over medium heat.
  2. Add mixed vegetables and stir-fry for 2-3 minutes until tender.
  3. Push vegetables to the side of the pan and add beaten eggs, scrambling until cooked.
  4. Add diced chicken and cooked rice to the pan.
  5. Pour soy sauce over the mixture and stir-fry everything together until heated through.
  6. Season with salt, pepper, and garnish with sliced green onions.
  7. Serve your Chicken Fried Rice hot and enjoy!

Notes

For optimal texture, use day-old rice and feel free to customize with different vegetables and proteins.
