Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/4 cup all-purpose flour
  • 3 tablespoons olive oil
  • 8 oz. mushrooms, sliced
  • 3/4 cup Marsala wine
  • 1/2 cup chicken broth
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the chicken breasts generously with salt and pepper.
  2. Coat each seasoned chicken breast in flour, shaking off any excess.
  3. Heat the olive oil in a large pan over medium heat.
  4. Sear the chicken breasts until beautifully browned, about 4-5 minutes per side.
  5. Sauté the sliced mushrooms in the same pan until soft and starting to brown.
  6. Create the sauce by pouring in the Marsala wine and chicken broth, scraping up the brown bits.
  7. Simmer the chicken in the sauce for about 10-15 minutes until cooked through.
  8. Garnish with freshly chopped parsley before serving.

Notes

Pairs wonderfully with mashed potatoes, pasta, or rice. Enjoy with a glass of Marsala wine for an exquisite meal.
