A comforting Italian-American dish with tender chicken breasts, earthy mushrooms, and a rich Marsala wine sauce.

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 4 tablespoons olive oil
  • 8 ounces mushrooms, sliced
  • 3/4 cup Marsala wine
  • 1/2 cup chicken broth
  • 2 tablespoons butter
  • Fresh parsley for garnish

Instructions

  1. Season the chicken breasts with salt and pepper. Dredge them in flour, shaking off any excess.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden brown, about 5-7 minutes per side.
  3. Remove the chicken and set aside. In the same skillet, add the sliced mushrooms and sauté until tender.
  4. Pour in the Marsala wine and chicken broth, scraping up any brown bits. Bring to a gentle simmer.
  5. Return the chicken to the skillet and let it simmer in the sauce for an additional 10 minutes.
  6. Stir in the butter until melted and serve hot, garnished with parsley.

Notes

Searing the chicken properly will enhance flavor. Serve with mashed potatoes or noodles.
