A comforting and flavorful chicken noodle soup, perfect for chilly nights and nurturing the soul.

Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup egg noodles
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add the chopped onion, minced garlic, sliced carrots, and celery to the pot. Sauté until the vegetables are tender, about 5 minutes.
  3. Pour in the chicken broth and bring everything to a hearty boil.
  4. Add the egg noodles and dried thyme, cooking until the noodles are tender.
  5. Stir in the shredded chicken, seasoning with salt and pepper to taste.
  6. Ladle the soup into bowls and enjoy hot.
