Chicken Orzo with Cherry Tomatoes and Spinach

A comforting one-pan meal that combines orzo pasta with chicken, cherry tomatoes, and spinach for a delicious family dinner.

Ingredients

  • 1 lb chicken breasts, cut into bite-sized pieces
  • ½ cup cherry tomatoes, halved
  • ½ cup spinach, chopped
  • Fresh basil, for garnish (optional)
  • 1 cup orzo pasta
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 cups chicken broth

Instructions

  1. Heat the olive oil in a large skillet over medium heat until shimmering.
  2. Cook the chicken pieces seasoned with salt and pepper until golden brown and cooked through, about 5-7 minutes. Remove and set aside.
  3. Toast the orzo in the same skillet for 1-2 minutes, stirring occasionally.
  4. Add the chicken broth and bring it to a boil, then reduce heat to simmer and cook until orzo is tender, about 8-10 minutes.
  5. Combine the cooked chicken, cherry tomatoes, spinach, garlic powder, oregano, and red pepper flakes into the skillet.
  6. Stir everything together and cook for an additional 2-3 minutes until the spinach wilts.
  7. Season with additional salt and pepper if needed, garnish with basil, and serve warm.

Notes

Pairs well with a side salad or garlic bread. Leftovers can be stored in the fridge for up to 3 days.
