A delightful Chicken Piccata recipe with a bright lemon caper sauce that transforms simple chicken breasts into an extraordinary dish.

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 1/2 cup fresh lemon juice
  • 1 cup chicken broth
  • 1/4 cup capers
  • Fresh parsley for garnish

Instructions

  1. Season the chicken breasts with a sprinkle of salt and pepper. Dredge in flour, shaking off any excess.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and brown for 3-4 minutes on each side. Remove and set aside.
  3. Melt 2 tablespoons of butter in the same skillet. Add the fresh lemon juice, chicken broth, and capers, scraping up any brown bits from the bottom. Bring to a boil.
  4. Return the chicken to the skillet and simmer for about 5 minutes until cooked through.
  5. Add the remaining butter and stir until melted, creating a glossy sauce.
  6. Plate the chicken, spoon the sauce over, and garnish with fresh parsley.

Notes

Serve alongside pasta or rice, and add a fresh green salad for a complete meal. Leftovers can be stored in an airtight container for up to 3 days.
