  • 4 boneless, skinless chicken breasts
  • Salt and pepper
  • 1/2 cup all-purpose flour
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1/2 cup fresh lemon juice
  • 1 cup chicken broth
  • 1/4 cup capers
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Season chicken breasts with salt and pepper, then dredge in flour, shaking off the excess.
  2. Heat butter and olive oil in a large skillet over medium-high heat.
  3. Cook the chicken in the skillet until golden brown, about 3-4 minutes per side, then remove and set aside.
  4. Make the sauce by adding lemon juice, chicken broth, and capers to the same skillet, stirring to combine.
  5. Simmer the sauce, then return the chicken to the skillet and cook for an additional 5-7 minutes until cooked through.
  6. Garnish with fresh parsley and serve.

Notes

For extra flavor, add minced garlic to the butter before cooking the chicken. You can also substitute gluten-free flour for a gluten-free option.
