A comforting chicken pot pie filled with tender chicken, vibrant vegetables, and warm spices, all encased in a flaky crust.

Ingredients

  • 1 lb chicken breast, cooked and diced
  • 1 cup peas and carrots
  • 1/2 cup diced potatoes
  • 1/3 cup onion, diced
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 3/4 cups chicken broth
  • 1 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 ready-made pie crusts

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Melt the butter in a skillet over medium heat and add the diced onions.
  3. Sprinkle in the flour, stirring for about a minute.
  4. Add the chicken broth and milk gradually, stirring until smooth and thickened.
  5. Combine the cooked chicken, peas, carrots, diced potatoes, salt, and pepper into the mixture.
  6. Place one pie crust in a dish and pour the filling inside. Top with the second crust and seal the edges.
  7. Cut slits in the top crust to allow steam to escape.
  8. Bake for 30–35 minutes or until the crust is golden brown.
  9. Let the pie cool slightly before serving.

Notes

For added flavor, consider using herbs or swapping in your favorite vegetables.
