A delightful Chicken Scarpariello with juicy chicken thighs, spicy sausage, and colorful vegetables, perfect for family gatherings.

Ingredients

  • 4 chicken thighs
  • 4 spicy sausages
  • 2 bell peppers (red and green), sliced
  • 1 onion, sliced
  • 4 garlic cloves, minced
  • 1/2 cup white vinegar
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken thighs with salt and pepper, then add them to the skillet. Brown on both sides, about 5-7 minutes each side.
  3. Remove the chicken from the skillet and set aside.
  4. Cook the sausage in the same skillet until browned and crispy.
  5. Add the sliced peppers, onion, and minced garlic. Cook until the vegetables are tender.
  6. Return the chicken to the skillet and add the white vinegar.
  7. Cover and cook on low heat for 25-30 minutes until the chicken is cooked through and tender.
  8. Serve the dish garnished with fresh parsley.

Notes

For extra flavor, marinate the chicken in garlic and vinegar for a couple of hours before cooking.
