A delightful combination of grilled chicken, fresh vegetables, and tasty toppings all packed between crusty rolls.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 bolillo rolls or sandwich buns
  • Refried beans
  • Avocado slices
  • Lettuce
  • Tomato slices
  • Pickled jalapeños
  • Sour cream

Instructions

  1. Preheat your grill or skillet over medium heat.
  2. Rub the chicken breasts with olive oil, garlic powder, onion powder, salt, and pepper.
  3. Cook the seasoned chicken for 6-7 minutes on each side or until fully cooked.
  4. Slice the chicken into strips after resting.
  5. Toast the bolillo rolls or sandwich buns lightly.
  6. Spread a generous layer of refried beans on the bottom half of each roll.
  7. Layer the grilled chicken, avocado, lettuce, tomato, and pickled jalapeños on top of the beans.
  8. Add sour cream on top, place the top half of the roll, and serve.

Notes
