A comforting Chicken Torta Sandwich filled with grilled chicken, creamy avocado, and spicy pickled jalapeños.

Ingredients

  • 2 telera or bolillo bread rolls
  • 2 grilled chicken breasts
  • 1 avocado, sliced
  • 1 cup refried beans
  • 1/2 cup pickled jalapeños
  • 1 cup shredded cheese (e.g., Monterey Jack or Queso Oaxaca)
  • Salt and pepper to taste

Instructions

  1. Slice the bread rolls in half, creating a cozy pocket to hold all the delicious fillings.
  2. Spread a generous layer of refried beans on the inside of each roll.
  3. Layer the grilled chicken breasts on top of the beans.
  4. Add the slices of creamy avocado, followed by pickled jalapeños.
  5. Sprinkle shredded cheese over the top.
  6. Close the sandwich with the top half of the roll and grill optionally for crispy texture.

Notes

For a well-rounded meal, serve with tortilla chips and salsa or guacamole. Leftovers can be stored for up to 2 days.
