A heartwarming Chicken Tortilla Soup that perfectly marries warmth and zest, bringing back memories of family gatherings.

Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 6 cups chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 can black beans (15 oz), rinsed and drained
  • 1 cup corn (frozen or canned)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 jalapeño peppers, diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Tortilla strips for serving
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Sauté the Aromatics: In a large pot, sauté chopped onion and garlic until translucent.
  2. Add diced jalapeños and cook for another 2 minutes.
  3. Stir in the shredded chicken, chicken broth, diced tomatoes, black beans, corn, cumin, chili powder, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat and let simmer for 20-25 minutes.
  5. Serve hot with tortilla strips, garnished with fresh cilantro and lime wedges.

Notes

For convenience, use a rotisserie chicken for shredded chicken. Don’t skip the lime garnish as it elevates the flavors.
