A light and satisfying wrap filled with chickpeas, feta, fresh vegetables, and a tangy yogurt sauce.

Ingredients

  • 1 cup canned chickpeas, rinsed and drained
  • 1/2 cup feta cheese, crumbled
  • 1 cup mixed vegetables (such as cucumber, bell pepper, and spinach)
  • 4 large wraps or tortillas
  • 1/2 cup yogurt
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Combine the chickpeas, feta cheese, and mixed vegetables in a bowl. Stir gently to ensure everything is well mixed.
  2. Mix the yogurt with lemon juice, salt, and pepper in another bowl to create the yogurt sauce.
  3. Lay out the wraps on a flat surface. Optionally warm them slightly in a pan for a few seconds.
  4. Spoon the chickpea mixture onto each wrap and drizzle with olive oil.
  5. Add a generous dollop of the yogurt sauce on top of the filling.
  6. Roll the wraps tightly and slice them in half before serving.

Notes

If you have leftovers, store them tightly wrapped in the refrigerator for up to 2 days. Add the yogurt sauce just before eating.
