  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Whisk together the marinade: In a bowl, mix olive oil, lime juice, lime zest, minced garlic, chili powder, cumin, paprika, salt, and pepper.
  2. Marinate the chicken: Rub the spice mixture evenly over the chicken breasts and marinate for at least 30 minutes.
  3. Preheat the grill or oven to medium-high heat.
  4. Grill to perfection: Cook marinated chicken for 6-8 minutes per side until it reaches 75°C (165°F).
  5. Rest the chicken: Remove from heat and let it rest for 5 minutes.
  6. Garnish and serve: Slice chicken, garnish with cilantro, and serve with lime wedges.

Notes

For extra flavor, marinate overnight. Chicken thighs can be used as a substitute.
