Delicious chocolate chip cheesecake bars with a buttery cookie crust and creamy filling, perfect for any occasion.

Ingredients

  • 40 oz Refrigerated chocolate chip cookie dough
  • 16 oz Cream cheese
  • 1 large egg
  • 1/4 cup Granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Preheat the oven to 350°F.
  2. Chill the cookie dough in the freezer for a few hours.
  3. Soften the cream cheese at room temperature.
  4. Prepare one large egg by sitting it out to reach room temperature.
  5. Line a 13×9 inch pan with parchment paper or non-stick foil.
  6. Create the cookie base by slicing half of the chilled cookie dough into 1/4-inch slices and pressing it into the bottom of the lined pan.
  7. Pre-bake the crust in the oven for 10 minutes.
  8. Mix the cheesecake filling with softened cream cheese, egg, granulated sugar, and vanilla until well combined.
  9. Assemble the cheesecake layer over the warm crust.
  10. Top with remaining cookie dough slices.
  11. Bake for an additional 35 to 40 minutes until edges are golden.
  12. Cool at room temperature, then refrigerate for at least 2 hours before serving.
