1 ¼ cups all-purpose flour (heat-treated)
1 cup mini chocolate chips
2 cups semi-sweet chocolate chips OR candy melts
1 tbsp coconut oil (optional, for smoother coating)
Instructions
Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan. In a large bowl, whisk the melted butter and granulated sugar until well combined. Add the eggs and vanilla extract, mixing until smooth. Gradually stir in the cocoa powder, all-purpose flour, baking powder, and salt until just combined. Spread this luscious mixture into the prepared pan and bake for 20–25 minutes, or until a toothpick inserted into the center comes out with moist crumbs. Allow the brownies to cool completely before moving on.
Beat together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the milk and vanilla extract, mixing until well incorporated. Gradually mix in the heat-treated flour until fully combined. Finally, fold in the mini chocolate chips and roll the mixture into 1-inch balls. Pop these onto a plate and refrigerate until firm.
Once your brownies are cool, cut them into squares slightly larger than the cookie dough balls. With your palms, flatten a brownie square, and place a cookie dough ball in the center. Gently wrap the brownie around the cookie dough and seal the edges.
Melt the chocolate chips or candy melts (and coconut oil, if using) in a microwave-safe bowl in 30-second bursts, stirring in between until smooth. Dip each brownie bite into the warm chocolate, letting any excess drip back into the bowl. Place the dipped treats on a parchment-lined tray.
Refrigerate the brownie bites for about 15 minutes, or until the chocolate coating is set. Serve chilled or at room temperature.
