Ingredients

  • 1 cup fresh spinach, chopped
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 large egg

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Mix together the flour, cocoa powder, sugar, baking powder, baking soda, and salt in a bowl.
  3. Whisk together the milk, vegetable oil, vanilla extract, and egg in another bowl.
  4. Combine the wet ingredients with the dry ingredients and stir until just combined.
  5. Fold in the chopped spinach gently.
  6. Portion the batter between muffin cups, filling them about two-thirds full.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Cool for a few minutes before transferring them to a wire rack.

Store muffins in an airtight container for up to 3 days or freeze for up to a month.
