Delightful clusters of fresh strawberries enveloped in Greek yogurt and coated in rich dark chocolate, perfect for a sweet snack or dessert.

  • 1 1/2 cups chopped strawberries
  • 1 cup plain Greek yogurt
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 2 tbsp coconut oil

Instructions

  1. Prepare the Strawberry Yogurt Mixture: In a large bowl, combine the chopped strawberries, plain Greek yogurt, honey, and vanilla extract. Mix thoroughly until the ingredients create a cohesive blend.
  2. Form the Clusters: Using a spoon or cookie scoop, portion out about 2 tablespoons of the yogurt mixture onto a parchment-lined baking sheet or large plate. You should be able to make around 10 clusters.
  3. Freeze for Firmness: Pop the baking sheet into the freezer. Allow the yogurt clusters to freeze for 1-2 hours until ready.
  4. Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in intervals of 15 to 30 seconds, stirring in-between, until the chocolate is completely melted and smooth.
  5. Dip Each Cluster: Carefully dip each frozen yogurt cluster into the melted chocolate to coat fully.
  6. Return to the Baking Sheet: Place each chocolate-dipped cluster back on the prepared baking sheet. Sprinkle a touch of sea salt on top if desired.
  7. Final Freeze: Place the clusters back in the freezer to allow the chocolate to harden for a few minutes.

Notes

For a creamier texture, substitute Greek yogurt with full-fat yogurt. Try using raspberries or white chocolate for variations.
