Deliciously portable cupcakes inspired by the classic Italian tiramisu, featuring rich chocolate and coffee flavors.

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup brewed coffee, cooled
  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 2 tbsp powdered sugar
  • Cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. Combine the all-purpose flour, cocoa powder, baking powder, and salt in a bowl.
  3. Cream together the softened butter and granulated sugar until light and fluffy.
  4. Incorporate the eggs one at a time, then stir in the vanilla extract and cooled brewed coffee.
  5. Mix in the dry ingredients until just combined.
  6. Divide the batter into the cupcake liners, filling each about two-thirds full, and bake for 18-20 minutes.
  7. Create the frosting by whipping together the mascarpone cheese, heavy cream, and powdered sugar until smooth.
  8. Frost the cooled cupcakes with the mascarpone mixture.
  9. Dust with cocoa powder before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze unfrosted cupcakes for up to 3 months.
