  • 8 oz spicy chorizo, casings removed
  • 2 medium potatoes, diced
  • 4 large eggs
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • 4 large flour tortillas
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Avocado, for topping
  • Salsa, for serving

Instructions

  1. Sauté the potatoes in a skillet over medium heat with oil, salt, and pepper until golden and crispy (10-12 minutes).
  2. Cook the chorizo in the same skillet, breaking it up until browned and cooked through (5-7 minutes).
  3. Add diced onion and bell pepper; cook until soft and fragrant (3-4 minutes).
  4. Scramble the eggs and pour into the skillet, stirring until just set, then mix in cheese until melted.
  5. Assemble the burritos by placing the mixture in tortillas, folding the sides, and rolling tightly.
  6. Garnish with cilantro, avocado, and serve with salsa.
