Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 1/4 cup fresh cilantro, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Whisk together the marinade: In a bowl, mix lime juice, olive oil, cilantro, garlic, cumin, salt, and pepper.
  2. Marinate the chicken: Place chicken breasts in a zip-top bag or shallow dish and pour marinade over them. Seal and let marinate for at least 30 minutes or up to 4 hours.
  3. Preheat the grill: Set your grill to medium-high heat.
  4. Grill the chicken: Remove chicken from marinade and discard. Grill for 6-7 minutes on each side or until cooked through.
  5. Serve hot: Enjoy the chicken with your favorite sides and a wedge of lime.

Notes

For extra flavor, consider adding a diced jalapeño to the marinade or experimenting with lemon or orange juice as a substitute for lime.
