  • 1/4 cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Prepare the Marinade: In a bowl, whisk together lime juice, chopped cilantro, minced garlic, cumin, salt, pepper, and olive oil until well combined.
  2. Marinate the Chicken: Place the chicken breasts in a resealable bag, then pour the marinade over them, ensuring that every piece is coated.
  3. Let it Soak: Seal the bag tightly and refrigerate for at least 30 minutes to allow the chicken to soak up the flavors.
  4. Heat the Grill: Preheat your grill to medium-high heat.
  5. Grill the Chicken: Remove the chicken from the marinade and place it on the hot grill. Cook for about 6-7 minutes on each side or until fully cooked through (internal temperature should reach 165°F).
  6. Serve and Garnish: Once grilled to perfection, plate the chicken and garnish with extra cilantro if desired.

Notes

For even more flavor, marinate the chicken overnight. This chicken can also be baked in the oven at 400°F for 25-30 minutes.
