A delightful cherry pie with a flaky crust and sweet, tart cherry filling that evokes memories of summer.

Ingredients

  • 2 cups fresh or frozen cherries
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1 tablespoon butter
  • 1 package pie crusts (2 crusts)
  • 1 egg (for egg wash)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Combine cherries, sugar, cornstarch, lemon juice, almond extract, and salt in a large bowl.
  3. Roll out one pie crust and place it in a pie pan.
  4. Pour the cherry mixture into the crust and dot with butter.
  5. Roll out the second crust and place it over the filling, sealing the edges.
  6. Brush the top with beaten egg.
  7. Bake for 25-30 minutes or until golden brown.
  8. Cool before serving.

Notes

Serve with vanilla ice cream or whipped cream. Store leftovers in the refrigerator for 3-4 days or freeze for 2 months.
