A delightful dessert featuring a creamy custard base topped with a crackly caramelized sugar layer, perfect for any special occasion.

Ingredients

  • 2 cups (500 ml) heavy whipping cream
  • 1 vanilla bean, split and seeded (or 1.52 teaspoons pure vanilla extract or paste)
  • 4 large egg yolks
  • 1/4 cup (50g) granulated sugar
  • About 6 teaspoons demerara or granulated sugar, for the caramelized topping

Instructions

  1. Preheat oven to 300°F (150°C). Place ramekins in a roasting pan.
  2. Warm the cream with the vanilla pod and seeds on medium heat until steamy.
  3. Whisk together the egg yolks and sugar until well blended.
  4. Temper the egg mixture by slowly pouring in half of the hot cream while whisking.
  5. Combine the egg mixture with the remaining cream and stir over low heat until slightly thickened.
  6. Strain the mixture through a fine-mesh sieve into another bowl.
  7. Pour the mixture evenly into the prepared ramekins.
  8. Bake in water bath for 25-30 minutes until set but slightly wobbly.
  9. Cool the ramekins on a wire rack.
  10. Chill in the refrigerator for at least 4 hours.
  11. Caramelize the sugar topping using a kitchen torch.
  12. Serve immediately and enjoy.

Notes

For best results, chill overnight. Use high-quality cream and fresh vanilla for superior flavor.
