A nostalgic classic peach pie with a luscious filling and flaky crust, perfect for summer desserts.

Ingredients

  • 56 fresh peaches (or 2 cans of peach pie filling)
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon butter
  • 1 pre-made pie crust (or homemade crust)
  • Additional crust for lattice topping (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. If using fresh peaches, peel, pit, and slice them into 1/2-inch wedges.
  3. In a mixing bowl, combine the sliced peaches, sugar, cornstarch, cinnamon, and lemon juice. Toss until combined.
  4. Pour the peach mixture into the prepared pie crust, dotting the top with small pieces of butter.
  5. If desired, create a lattice top with additional pie crust.
  6. Bake in the preheated oven for 45-50 minutes, until the filling is bubbling and the crust is golden brown.
  7. Let the pie cool before serving. Enjoy with ice cream if desired.

Notes

For best results, let the pie sit for at least 30 minutes before slicing to allow the filling to set.
