A warm and comforting dish featuring poached eggs in a vibrant tomato sauce rich in herbs and spices, perfect for any meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 can (28 ounces) crushed tomatoes
  • Salt and pepper to taste
  • 6 large eggs
  • Fresh parsley or cilantro for garnish
  • Feta cheese (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat until shimmering.
  2. Add the onion and red bell pepper, cooking until softened, about 5 minutes.
  3. Stir in the garlic, cumin, and paprika; cook for another minute until fragrant.
  4. Pour in the crushed tomatoes, season with salt and pepper, and let it simmer for 10 minutes.
  5. Use a spoon to create wells in the tomato mixture and crack an egg into each well.
  6. Cover and cook for 5-7 minutes, until the eggs are just set.
  7. Garnish with fresh parsley or cilantro and sprinkle with feta cheese if desired. Serve warm with crusty bread or pita.

Notes

Serve shakshuka with warm bread for scooping up the sauce. Can be customized with extra vegetables or spices.
