  • 1 can coconut milk
  • Juice of 2 limes
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon chili flakes
  • Salt and pepper to taste
  • Steamed jasmine rice or sautéed vegetables for serving

Instructions

  1. Sauté the aromatics: In a skillet over medium heat, add a bit of oil and sauté minced garlic and grated ginger until fragrant.
  2. Season and sear the chicken: Season chicken breasts with salt and pepper, then add them to the skillet. Cook until browned on both sides, about 3-4 minutes per side.
  3. Pour in the coconut milk and lime juice, stirring to combine.
  4. Add the chili flakes and bring to a simmer. Lower the heat if needed.
  5. Cook until the chicken is fully cooked, about 10-15 minutes.
  6. Stir in the freshly chopped cilantro before serving.
