Soft and chewy cookies with the flavors of traditional coffee cake, topped with a delightful cinnamon sugar blend.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/2 cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  7. Mix together some flour, sugar, and butter until crumbly for the streusel topping.
  8. Bake for 12-15 minutes until the edges are golden brown.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.
  10. Mix powdered sugar with milk to create icing and drizzle over the cooled cookies.
  11. Enjoy with a cup of coffee or tea!
