Deliciously fluffy coffee cake muffins topped with a sweet crumble, perfect for breakfast or a snack.

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 stick unsalted butter, melted
  • 1 large egg
  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • ½ cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix together the flour, granulated sugar, baking powder, baking soda, and salt in a large bowl.
  3. Whisk together the melted butter, egg, sour cream, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until just mixed.
  5. Mix the brown sugar, cinnamon, and chopped nuts in a small bowl to make the crumble.
  6. Fill each muffin cup halfway with batter, sprinkle with crumble, then top with remaining batter.
  7. Bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
  8. Allow the muffins to cool slightly before serving.

Notes

Store leftover muffins in an airtight container at room temperature for up to 3 days or freeze for longer storage. Reheat in the microwave for best results.
