  • 1/2 cup brown sugar
  • 2 tsp. cinnamon
  • 2 T flour
  • 1/2 cup walnuts (chopped, optional)
  • 1 T butter (room temperature)
  • 3/4 cup powdered sugar
  • 1 T milk (extra, if needed)

Instructions

  1. Prepare the Batter Base: Preheat your oven to 350°F (175°C) and grease a 9-inch round or square baking pan. In a large mixing bowl, combine the egg, oil, vanilla, sugar, and milk, whisking until well blended.
  2. Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, and salt. Gently add the dry mixture to the wet ingredients, stirring until just combined. Be careful not to overmix— a few lumps are okay!
  3. Create the Streusel Topping: In a separate bowl, melt your 2 tablespoons of butter, then mix in the brown sugar, cinnamon, and 2 tablespoons of flour until crumbly. If you’re using walnuts, fold them into this mixture for an added crunch.
  4. Layer and Swirl: Pour half of the cake batter into the prepared pan, spreading it evenly. Next, sprinkle half of the streusel topping over the batter. Pour the remaining batter on top and finish with the rest of the streusel. Use a butter knife to gently swirl the streusel into the batter, creating beautiful marble patterns.
  5. Bake to Perfection: Pop the pan into the preheated oven and bake for about 30 minutes or until a toothpick inserted into the center comes out clean. Your kitchen should be filling with mouthwatering scents at this point!
  6. Cool and Icing (Optional): Once baked, let the coffee cake cool in the pan for about 10 minutes before transferring it to a wire rack.
