A delightful and nutritious pudding made with chia seeds and coffee, perfect for breakfast or a snack.

  • 1/2 cup chia seeds
  • 2 tablespoons coffee (brewed or instant)
  • 2 tablespoons maple syrup or sweetener of choice
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Whisk together almond milk, coffee, maple syrup, vanilla extract, and a pinch of salt in a mixing bowl until well combined.
  2. Stir in the chia seeds until they are completely mixed in with the liquid.
  3. Let the mixture sit for 5-10 minutes, then stir again to prevent clumping.
  4. Cover the bowl and refrigerate for at least 2 hours or, for best results, overnight.
  5. Serve your pudding in bowls, topped with your favorite fruits or additional toppings.

Notes

Stir in a splash of almond milk for a smoother texture if the pudding thickens too much in the fridge.
