A refreshing and creamy coleslaw recipe a perfect side for barbecues and gatherings.

Ingredients

  • ½ head of cabbage
  • 2 large carrots
  • 1 cup mayonnaise
  • 2 tablespoons vinegar (apple cider or white)
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  1. Shred the vegetables: Chop the cabbage into quarters, remove the core, then finely shred it. Peel and either grate or julienne the carrots, then combine in a mixing bowl.
  2. Create the dressing: In a separate bowl, combine mayonnaise, vinegar, sugar, salt, and pepper. Mix well until smooth.
  3. Combine the shredded vegetables and dressing: Pour the dressing over the veggies and mix until well coated.
  4. Chill and serve: Cover and refrigerate for at least one hour before serving for best flavor.

Notes

For a lighter coleslaw, reduce the mayonnaise or replace half with Greek yogurt.
