Delightful cornmeal pancakes that are fluffy on the inside and perfect for soaking up syrup.

Ingredients

  • 1 cup cornmeal
  • 1 cup milk
  • 1 egg
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons melted butter
  • Oil for cooking

Instructions

  1. Mix the cornmeal, milk, egg, sugar, baking powder, and salt until well combined.
  2. Stir in the melted butter until the mixture is smooth.
  3. Heat a skillet over medium heat and lightly grease it with oil.
  4. Pour about 1/4 cup of the batter onto the skillet for each pancake.
  5. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with maple syrup or your choice of toppings.

Notes

Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 2 months.
