  • 6 large eggs
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1 cup spinach (fresh or frozen)
  • 1/2 cup diced bell pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together cottage cheese, eggs, salt, pepper, garlic powder, and onion powder until smooth.
  3. Add in the shredded cheese, spinach, and diced bell pepper, stirring to combine.
  4. Pour the mixture into a greased baking dish.
