A comforting egg bake combining cottage cheese, cheddar cheese, and vegetables for a nutritious breakfast option.

  • 2 cups cottage cheese
  • 1 cup shredded cheddar cheese
  • 1 cup chopped spinach (optional)
  • 1/2 cup chopped onion
  • 1/4 cup milk
  • Salt and pepper to taste
  • Olive oil or butter for greasing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the eggs, milk, salt, and pepper in a large bowl.
  3. Stir in the cottage cheese, shredded cheddar cheese, chopped spinach, and onion.
  4. Grease a baking dish generously with olive oil or butter.
  5. Pour the egg mixture into the prepared dish and smooth out the top.
  6. Bake for 30-35 minutes until set and golden brown.
  7. Cool for a few minutes, then cut into squares and serve warm.

Notes
