  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup chopped vegetables (spinach, bell peppers, or onions)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder (optional)
  • 1 tablespoon olive oil or butter (for greasing the baking dish)

  2. Whisk together the eggs, cottage cheese, salt, pepper, and optional garlic powder until well blended.
  3. Fold in the shredded cheese and your choice of chopped vegetables. Mix until everything is evenly combined and colorful.
  4. Pour the mixture into the prepared baking dish, making sure it spreads evenly.
  5. Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top is golden brown.
  6. Let the casserole cool slightly before slicing for easier serving. Enjoy warm!
