Delicious and fluffy pancakes made with cottage cheese for extra nutrition and texture.

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup milk
  • 1 tablespoon sugar (optional)
  • Butter or oil for cooking

Instructions

  1. Combine Wet Ingredients: In a mixing bowl, combine the cottage cheese, eggs, milk, and sugar (if you’re using it). Stir until the mixture is somewhat smooth—don’t worry if a few cottage cheese lumps remain; they’ll add a lovely texture to your pancakes.
  2. Mix Dry Ingredients: In another bowl, whisk together the flour, baking powder, and salt. This ensures that your pancakes rise beautifully when they hit the heat.
  3. Combine Wet and Dry Mixtures: Gradually stir the dry ingredients into the wet mixture until just combined. Be careful not to over-mix; a few lumps are okay! We want our pancakes to stay fluffier.
  4. Heat Up the Pan: Heat a non-stick skillet over medium heat and add butter or oil. Make sure it’s hot enough that the butter melts but doesn’t brown.
  5. Pour and Cook: Pour batter onto the skillet to form pancakes. Cook until bubbles form on the surface, then flip and cook the other side until golden brown—usually about 2-3 minutes per side.
  6. Serve and Enjoy: Serve warm with syrup or your favorite toppings. Whether you go classic with maple syrup, or add fresh berries or whipped cream, you can’t go wrong!

Notes

Leftover pancakes can be stored in an airtight container in the fridge for up to three days. They freeze well too.
