Light, fluffy pancakes infused with cottage cheese for a delicious and protein-packed breakfast.

  • 1 cup cottage cheese
  • 1 cup flour
  • 2 eggs
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Butter or oil for frying

Instructions

  1. Combine the dry ingredients: sift together the flour, baking powder, and salt in a mixing bowl.
  2. Mix the wet ingredients: combine the cottage cheese, eggs, and sugar in another bowl and whisk until smooth and creamy.
  3. Bring it together: pour the dry mixture into the wet ingredients and gently fold until just combined; a few lumps are fine.
  4. Heat the skillet: place a skillet over medium heat and add butter or oil until shimmering.
  5. Cook the pancakes: scoop 1/4 cup of batter onto the skillet for each pancake and flip when bubbles form.
  6. Flip and finish: turn pancakes over and cook until golden brown, about 2–3 minutes.
  7. Serve and enjoy: remove from skillet and serve warm with maple syrup or fresh fruit.

Notes

Try adding vanilla extract for sweetness or citrus zest for a fresh flavor. Store leftovers in the refrigerator for up to 3 days or freeze for longer storage.
