  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Whisk together flour, baking powder, baking soda, salt, and cinnamon in a medium bowl.
  3. Cream the softened butter and sugar together until fluffy.
  4. Add eggs one at a time, mixing well after each addition, then blend in vanilla extract.
  5. Combine dry ingredients with the wet mixture until just incorporated.
  6. Fold in grated carrots, crushed pineapple, and chopped walnuts.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  9. Cool completely in the pan on a wire rack.
  10. Beat cream cheese, powdered sugar, and vanilla extract together until fluffy.
  11. Frost the cooled bars then cut into squares and serve.
