Delightful pancake rolls filled with a luscious cream cheese and fresh strawberry filling, perfect for breakfast or brunch.

Ingredients

  • 1 cup flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 1 egg
  • 1 cup milk
  • 1 tsp vanilla extract
  • 1 tbsp butter (melted)
  • 1 cup cream cheese (softened)
  • 0.33 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup strawberries (chopped)
  • 2 tbsp sugar

Instructions

  1. Mix the chopped strawberries with 2 tablespoons of sugar and set them aside to marinate.
  2. In a bowl, mix together your dry ingredients: flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the wet ingredients: egg, milk, melted butter, and vanilla extract.
  4. Combine both mixtures until just combined; a few lumps are okay!
  5. Heat a non-stick pan over medium heat and add a little butter. Pour about a quarter cup of batter for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown. Repeat until all batter is cooked.
  7. In a mixing bowl, beat the softened cream cheese with powdered sugar and 1 teaspoon of vanilla extract until creamy and smooth.
  8. On each pancake, spread a layer of the cream cheese mixture, followed by a generous spoonful of the sweetened strawberries.
  9. Starting from one edge, roll the pancake tightly around the filling. Once rolled, slice them into 1-inch pieces.
  10. Serve your delightful pancake rolls with syrup, more strawberries, or a dusting of powdered sugar.

Notes

For best results, avoid overmixing the pancake batter. Use fresh strawberries for superior flavor. Store leftovers in an airtight container and reheat before serving.
