A comforting and simple Italian dish featuring creamy pasta coated with crispy bacon.

Ingredients

  • Spaghetti or fettuccine pasta
  • Bacon or pancetta
  • Eggs
  • Parmesan cheese
  • Garlic
  • Black pepper
  • Salt
  • Parsley (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente, salting the water generously.
  2. In a large skillet over medium heat, cook the bacon or pancetta until crispy.
  3. In a bowl, whisk together the eggs and grated Parmesan cheese until well combined.
  4. Add minced garlic to the skillet with the bacon and cook for 1 minute.
  5. Drain the pasta and add it to the skillet with the crispy bacon.
  6. Remove the skillet from heat and quickly add the egg mixture, stirring constantly.
  7. Season with black pepper and salt to taste.
  8. Garnish with parsley and additional Parmesan cheese before serving.

Notes

For a creamier sauce, remove the skillet from heat before adding the egg mixture. You can also fold in heavy cream for extra richness.
